Well, I can only say that our heart beats faster than usual when we are excited or something.
That is the physical reaction to our emotions.

Nagiging ganito lang ako pag magre-recite kami or pag nasa contest ako
Never been excited physically, but I do feel embarassed/a little bit nervous when I'm talking with a guy/my boyfriend over a phone.

it reacts fast because of some excitement and maybe hormones are being induced.

though heart also doesn't beat fast it... your eyes also dilate

It increases due to the excitement and anticipation of seeing the one you love or like. You will love someone for a specific quality or many qualities, and you will have that sense of anticipation of being able to see or be close to etc. of that quality.
